Heat a pot over medium-high heat and add a little olive oil.

Brown 3 lb of ground beef in the pot.

Add 1 teaspoon chili powder, 1.5 teaspoons cumin, 1.5 tablespoons Chipotle chili pepper, beef seasoning, and 1 tablespoon garlic powder to the browned meat and stir for about a minute.

Drain some juice from the can of Rotel and stir it into the meat mixture.

Add salt to taste.

Stir in a jar of pre-made enchilada sauce and about 1 cup of leftover tomato sauce from the fridge.

Lower the heat and let the mixture simmer for about 20 minutes.

Add chopped purple onions to the mixture and let it simmer for an additional 10 minutes.

Preheat the oven to 375°F.

Take a clump of refried beans and spread it on the outside edge of a burrito-sized tortilla to help seal it.

Add some of the meat filling and a sprinkle of fiesta blend cheese to the tortilla.

Roll the tortilla, tucking in the sides as you go to keep the filling inside.

Place the rolled tortillas in a greased Pyrex dish.

Pour more enchilada sauce over the top of the rolled tortillas and sprinkle with more cheese.

Bake in the oven at 375°F for 20-25 minutes, until the edges of the tortillas start to brown.

Remove from the oven and let sit for about 5 minutes before cutting into it.
