In a small bowl, add 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 tablespoon cumin, 1 tablespoon paprika, 1 tablespoon oregano, and 1 tablespoon cayenne pepper. Mix until combined and set aside.

Place a frying pan over medium heat and add 2 tablespoons of olive oil and 3 tablespoons of flour. Mix to combine into a paste.

Add half a cup of chicken stock and stir until it thickens. Then add another half cup of chicken stock and stir.

Add 1 and 1/2 cups of pata, 1 tablespoon of salt, 1 tablespoon of pepper, and 2 teaspoons of the spice mix. Mix thoroughly until combined and remove from heat.

In another frying pan over medium heat, add 1 tablespoon of olive oil, half a teaspoon of minced garlic, and 1 finely chopped onion. Cook for 2 minutes.

Add 500 g of ground beef and cook for 2 minutes. Then add the remaining spice mix, 400 g of black beans, and 400 g of refried beans. Mix thoroughly and remove from heat.

Smear sauce at the bottom of your baking dish. Place down a tortilla and add three scoops of the filling towards the bottom of the tortilla. Roll up the tortilla and place it in the baking dish. Repeat until the bottom of the baking dish is fully covered.

Cover the enchiladas with the sauce prepared earlier, top with cheese, and cover with tin foil.

Place into a fan-forced oven at 180° C and bake for 10 minutes. Remove the foil and bake for another 10 minutes. Remove from oven and serve.
