Add the water and yeast into a mixing bowl and let sit to proof for 7 min.

Add the flour and the salt. Using a spatula or wooden spoon, stir well to form a wet, very sticky dough.

Cover the bowl with a towel, and leave at room temperature for 2 hours or until it doubled the volume.

Flour a work surface well and flour your hands and shape into 2 baguettes.

Transfer loafs to the baking sheet, folds facing down. Sprinkle the top with flour.

Place a clean, dry towel over the loaf, and allow to rise for 20-30 min in a warm spot.

Place a pan half-filled with water on the bottom rack and preheat to 480 F.

Remove the towel, and make a 1/2-inch deep incision across the top of the loaf with a sharp knife.

Bake on the center rack for 20 to 25 minutes.

Allow to cool on a rack before slicing.
