Preheat the oven to 375°F (190°C).

Wash and slice the bell peppers in half lengthwise, removing seeds and membranes.

In a pan, heat olive oil over medium heat and sauté chopped onion and garlic until translucent.

Add ground meat to the pan and cook until browned, breaking it apart as it cooks.

Stir in cooked rice, tomato sauce, cumin, paprika, salt, and pepper; mix well.

Remove from heat and stir in chopped parsley and lemon juice.

Stuff each bell pepper half with the meat and rice mixture, pressing down gently.

Place stuffed peppers in a baking dish and pour a little water at the bottom to create steam.

Cover with foil and bake for 30 minutes, then uncover and sprinkle cheese on top.

Return to the oven and bake for an additional 10-15 minutes until cheese is melted and peppers are tender.

Let cool slightly before serving.
