It showcases kidney beans, often paired with fresh vegetables and spices, creating a hearty and nutritious meal. Traditionally served with rice or bread, it reflects the communal nature of Sudanese dining. Today, variations exist across the Middle East and North Africa, with each culture adding its unique twist, making it a versatile and cherished dish.

Wash 2 cups of great northern beans and add them to a pot.
Add boiling water to the pot with the beans.
Add 1 tablespoon of oil to the pot and cover it, cooking until the beans are ready, checking regularly and adding water as needed.
While the beans are cooking, heat 3-4 tablespoons of oil in another pot.
Add chopped onions to the pot and fry until they are golden brown.
Add the meat to the pot along with black pepper and 1 tablespoon of coriander powder.
Add 2 cinnamon sticks and 2 tablespoons of vegetable stock powder to the pot and mix well.
Add water to the pot and then add 2 tablespoons of tomato paste, mixing it in and cooking covered on low heat for 45 minutes.
Check the seasoning and add salt if needed, but note that the creator did not add salt as it tasted just right.
Add 1 tablespoon of garlic paste to the pot and wipe the edges with a clean paper towel.
Add 1 tablespoon of cumin powder and stir well to combine.
Check the beans to ensure they are softened, using a finger or fork to press on a bean.
Once the beans are ready, add them to the stew and stir to combine everything.
Turn down the heat and cook covered for 5 minutes.
