Chop the chicken fillet into thin slices and season with salt.
Add sesame seeds, pepper, capers, and olive oil to the chicken and mix well.
Add sesame seeds to the bread cubes, drizzle with olive oil, and mix.
Fry the peanuts in a pan over medium heat until golden, stirring occasionally.
Fry the bread cubes in the pan over medium heat for a few minutes.
Prepare vegan mayonnaise by blending 300ml of olive oil, 150ml of soy milk, mustard, a pinch of salt, and lemon juice with a hand blender for about 90 seconds.
Add garlic cloves to the mayonnaise and blend for another 30-40 seconds until ready.
Chop the lettuce and place it in a deep bowl.
Add the vegan mayonnaise over the lettuce and mix well.
Add peanuts, bread cubes, and chicken pieces to the salad and mix.
Serve in a beautiful green plate, adding chopped cherry tomatoes and more mayonnaise on top.
Sprinkle with grated cheese and herbs.
