- 2In a large bowl, combine the sliced butternut squash, heavy cream, honey, salt, black pepper, nutmeg, and cinnamon. Mix well to coat the squash evenly.
- 3In a separate bowl, mix the breadcrumbs, grated Gruyère cheese, and chopped walnuts together.
- 4In a greased baking dish, layer half of the butternut squash mixture evenly on the bottom.
- 5Sprinkle half of the breadcrumb mixture over the first layer of squash.
- 6Add the remaining butternut squash mixture on top, followed by the rest of the breadcrumb mixture.
- 7Drizzle olive oil over the top of the gratin.
- 8Cover the baking dish with aluminum foil and bake for 30 minutes.
- 9Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the squash is tender.
- 10Let it cool for a few minutes before serving.
