Slice the French bread into 6 thick slices, about 1 inch each.
Butter both sides of each slice of bread with softened butter.
Heat a pan on the stove and fry the buttered bread slices until toasty on both sides.
In a bowl, mix together 6 tbsp softened butter, 1 tbsp mayonnaise, 1/8 tsp kosher salt, 1/8 tsp ground black pepper, 1/2 tsp granulated garlic, and 1/2 tsp smoked paprika.
Add 4 oz shredded cheddar cheese, 4 oz shredded monterey jack cheese, and 2 oz grated Parmesan cheese to the mixture and combine until sticky.
Spread the cheesy mixture generously on top of the fried toast slices.
Place the toast on a rack in a baking tray and preheat the oven to 375°F.
Bake the toast in the oven for 10 to 15 minutes until the cheese is melted and bubbly.
Broil for 15 to 30 seconds to achieve a golden brown color on top.
Garnish with freshly chopped parsley before serving.
