Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Place the tomatillos on a baking sheet and roast in the oven for about 15-20 minutes, until they are soft and slightly charred.
  3. 3Remove the tomatillos from the oven and let them cool slightly.
  4. 4In a blender or food processor, combine the roasted tomatillos, cilantro, onion, jalapeños, garlic, salt, and lime juice.
  5. 5Blend until smooth, adjusting the seasoning to taste.
  6. 6If you prefer a chunkier salsa, pulse the ingredients a few times instead of blending completely.
  7. 7Transfer the salsa to a bowl and let it sit for at least 30 minutes to allow the flavors to meld.
