Salsa Verde

Cultural Context

Salsa Verde is a staple in Mexican cuisine, often used as a condiment for tacos, enchiladas, and grilled meats. Its vibrant green color and tangy flavor come from tomatillos, which are a key ingredient. The sauce reflects the diverse culinary traditions of Mexico, where fresh ingredients and bold flavors are celebrated. Salsa Verde can vary in heat and flavor depending on the type of peppers used and is commonly found in both home kitchens and restaurants throughout the country.

1

Peel the skins off the tomatillos and lay them face down on a sheet tray.

2

Split the anaheim peppers in half, remove the seeds, and lay them face down on the tray.

3

Lay out a quarter of an onion, separated into a few layers, on the tray.

4

Add a few cloves of peeled garlic to the tray.

5

Preheat the broiler on high.

6

Broil the vegetables for about 10-11 minutes until nicely blackened, moving them around halfway through for even charring.

7

If desired, use a blow torch to add extra char to the vegetables.

8

Blend the charred vegetables with cilantro in a blender.

9

Add a big pinch of salt to the blender and blend until smooth, adjusting seasoning to taste.

10

Optionally, sear the blended salsa in a hot pan for added flavor.
