1 lb chicken breast, cut into bite-sized pieces
2 tbsp vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 inch ginger, grated
2 tsp curry powder
1 tsp ground cumin
1/2 tsp turmeric
1 can (14 oz) coconut milk
1 cup chicken broth
1 cup diced tomatoes
1/2 tsp salt
1/4 tsp black pepper
1/4 cup fresh cilantro, chopped (for garnish)

Heat the vegetable oil in a large pan over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the chicken pieces to the pan and cook until they are no longer pink, about 5-7 minutes.

Sprinkle in the curry powder, ground cumin, turmeric, salt, and black pepper, stirring to coat the chicken evenly.

Pour in the coconut milk and chicken broth, then add the diced tomatoes.
