Preheat the oven to 400°F (204°C).
Grease a 9 x 5 inch loaf pan.
In a medium sauté pan over medium heat, sauté the diced bacon until it just starts to develop some color.
Drain off the excess grease from the bacon.
Add the diced apples and onions to the pan with the bacon and sauté for 5 to 7 minutes until they get a little softer and the sugars begin to caramelize.
Remove the pan from the heat and set it aside to cool.
In a large bowl, whisk together the eggs, milk, Greek yogurt, and olive oil until well combined.
Add the gluten-free Bisquick to the wet mixture and mix until a soft dough forms using a rubber spatula or spoon.
Stir in the cooled apple, onion, and bacon mixture until evenly dispersed throughout the dough.
Empty the dough into the prepared loaf pan and smooth out the top with a rubber spatula or offset spatula.
Bake the bread for 50 to 55 minutes.
Let the bread cool in the pan for 10 minutes before removing it onto a baking rack to cool completely.
Slice and serve as desired.
