Prepare the Cajun Trinity by dicing 1 onion, 1 bell pepper, and 2 stalks of celery into small pieces.

Tie bay leaves and thyme together with butcher twine to create an herb bundle.

Dice the andouille sausage into bite-sized pieces, using a separate cutting board for meat.

Soak 2 cups of red kidney beans in water overnight in the fridge before cooking.

Heat a Dutch oven and add olive oil, then add the diced andouille sausage to render the fat.

Once the sausage is golden brown, add the diced onion, bell pepper, and celery to the pot.
