Whole wheat flour adds fiber while self-rising flour is often cheaper.

Reduced-fat cheese lowers calories, while processed cheese can be less expensive.

Preheat the oven to 350°F.

In a mixing bowl, dump in 1 box of Jiffy corn muffin mix.

Add 14 oz can of whole kernel corn (drained) to the bowl.

Add 14 oz can of creamed corn to the bowl.

Mix the ingredients together.

Add 1 cup of sour cream to the mixture and mix again.

Pour in 1/2 cup of melted butter and mix until combined.

Add 2 eggs to the mixture and mix well.

Grease a 9x9 or 8x8 pan and pour the mixture into it.

Sprinkle 3/4 cup of cheddar cheese on top of the mixture.

Crumble 10 slices of cooked bacon and sprinkle it over the cheese.

Place the pan in the oven and bake for about 50 minutes, checking around 45 minutes to ensure it's not soupy in the middle.
