Heat a skillet over medium heat.
Add olive oil and sauté onions until translucent.
Add bell peppers, zucchini, and mushrooms; cook until tender.
Place a tortilla in the skillet; sprinkle cheese on half of it.
Add sautéed vegetables on top of the cheese.
Fold the tortilla over and cook until golden brown on both sides.
Remove from skillet and cut into wedges.
Garnish with cilantro and serve with sour cream.
