Cultural Context
Sweetbreads, the culinary term for the thymus or pancreas of young animals, have been enjoyed since ancient times. They are considered a delicacy in many cultures, often served in fine dining establishments. Today, sweetbreads are celebrated for their rich flavor and tender texture, appearing in various gourmet dishes around the world.
Hydrate raisins by adding boiling water and setting aside.
Combine dry ingredients: flour, baking powder, salt, brown sugar, and grated tonka beans in a bowl.
Mix well to incorporate all dry ingredients.
In a separate bowl, combine wet ingredients: egg, coconut milk, coconut essence, and melted butter.
Add the wet mixture to the dry ingredients and combine until well mixed.
Drain the hydrated raisins and fold them into the batter.
Prepare the baking pan by buttering it generously to prevent sticking.
Pour the batter into the prepared pan, forming a bumpy top for texture.
Grate fresh coconut on top and sprinkle additional brown sugar for sweetness.
Bake at 300°F for 90 minutes to maintain moisture and prevent over-browning.
Allow to cool in the pan for 30 minutes before slicing.
