Crescent Rolls

Cultural Context

Crescent rolls, often associated with French cuisine, are a delightful pastry that showcases the art of laminated dough. Historically, they evolved from Austrian kipferl and became popular in France, where they symbolize indulgence and celebration. Today, these flaky rolls are enjoyed globally, often served at breakfast or as a side to meals, with variations found in different cultures, including the American crescent roll made from pre-packaged dough.

1

Pour 200 ml of warmed milk into a bowl.

2

Add 1 tablespoon of sugar and 40g to 50g of fresh yeast to the milk and mix together.

3

Let the mixture sit for about ten minutes.

4

Place 250g of margarine in the freezer.

5

Measure out approximately 500g of flour in a mixing bowl.

6

Add 1 tablespoon of salt to the flour and mix.

7

Add the activated yeast mixture to the flour and salt.

8

Add 300 ml of warm water and 70 ml of oil, reserving 30 ml of oil for later.

9

Mix everything together, gradually adding more flour until the dough becomes firm enough.

10

Knead the dough by hand and pour the reserved oil over it, flipping it over and kneading a little more.

11

Shape the dough into a round ball, cover it, and let it rise in a warm place for an hour.

12

After an hour, press the dough down and sprinkle more flour on it.

13

Roll out the dough into a square or rectangle shape.

14

Grate the cube of margarine over the rolled-out dough.

15

Roll up the dough and cut it into 5 pieces, then roll each piece into a circle.

16

Cut each circle into triangles.

17

Fill the triangles with any filling of your choice and arrange them on a greased or lined baking sheet.

18

Let the rolled-up crescent rolls rest for 30 minutes.

19

Beat 1 egg yolk with 1 tablespoon of milk and brush the crescent rolls with this mixture.

20

Sprinkle each roll with sesame seeds and coarse sea salt if desired.

21

Preheat the oven to 200°C.

22

Bake the crescent rolls for 25 to 30 minutes, depending on desired crispiness.
