Chocolate Dipped Shortbread Cookies

1 cup unsalted butter
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup sweet rice flour
1 tsp baking powder
1/2 tsp xanthan gum
1/4 tsp salt
1 cup semi-sweet chocolate chips
for garnish sprinkles

Beat butter in a stand mixer.

Add sugar and cream until well combined.

Add vanilla and whisk together.

Add low FODMAP flour, sweet rice flour, baking powder, xanthan gum, and salt to the mixture.

Shape the dough into a log about 1.5 inches by 12 inches.
