1 ½ lb skinless, boneless Chicken Breasts
½ small Onion
2 Garlic Cloves

2 ripe Avocados, pitted, peeled, and mashed
½ cup Mayonnaise
2 tbsp freshly squeezed Lemon Juice (plus more if needed)
½ cup Red Bell Pepper, finely chopped
¼ cup Scallions, finely chopped
2 tbsp Cilantro, finely chopped
