- 3Sprinkle the shredded cheese evenly over the rice.
- 4Add the black beans and corn kernels on top of the cheese.
- 5Distribute the diced tomatoes and sliced jalapeños over the mixture.
- 6Sprinkle chili powder, cumin, and salt evenly over the toppings.
- 7Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.

- ●2 tbsp oil for cooking
Instructions
- 1In a mixing bowl, combine semolina, yogurt, and water. Mix well to form a smooth batter.
- 2Add salt and baking soda to the batter and mix again. Let it rest for 10-15 minutes.
- 3Heat a non-stick pan or griddle over medium heat and add a little oil.
- 4Pour a ladleful of the batter onto the pan and spread it into a thick circle.
- 5Sprinkle chopped onions, tomatoes, bell peppers, coriander leaves, and green chilies on top of the batter.
- 6Drizzle a little oil around the edges and cook until the bottom is golden brown, about 3-4 minutes.
- 7Flip the uttapam and cook the other side for another 2-3 minutes until golden brown.
- 8Remove from the pan and repeat the process with the remaining batter, adding more oil as needed.
- 9Serve hot with coconut chutney or sambar.
