Garlic, chopped - 1 tbsp
All purpose flour - 3 tbsp
Red chilli powder - 1 tsp
Chilli flakes - 1 tsp
Cumin powder - 1 ½ tsp
Dry Oregano - ½ tsp
Dry basil - ½ tsp
Black pepper powder - ½ tsp
Salt - 2 ½ tsp
Tomatoes, pureed - 6-7 nos (3 cups)
Tomato Ketchup - 3 tbsp
Water - 1 cup
Onions, diced - 2 nos (1 cup)
Spring onion, white, chopped - ½ cup
Capsicum, diced - 1 nos
Mushrooms, sliced - 300g
Sweet corn, frozen & defrosted - ½ cup
Spinach leaves - 100g
Black pepper - ¼ tsp
Grated cheese mix - 1 cup
Enchilada sauce - ½ cup
Coriander, chopped - 3 tbsp
Tortillas - 4 nos
Spring onions, green, chopped - 3 tbsp
Jalapenos, chopped - 3 tbsp

Prepare the cheese mix by combining grated cheddar and mozzarella; set aside.
