Place the potatoes in a medium-sized bowl and add about 1 tablespoon of cooking oil and a few pinches of kosher salt.

Mix everything together with a fork or potato masher and taste to adjust seasonings as desired.

Add some of the leftover shredded cheese to the top of each potato half.
