1

Clean the chicken by adding salt and lime, then rinse it well to remove any blood or dirt.

2

In a large pot, add 1 tablespoon of butter, 1/2 chopped onion, and 1/2 chopped red bell pepper. Sauté until the onion is translucent.

3

Add 4 minced garlic cloves to the pot and sauté until fragrant.

4

Add the cleaned chicken to the pot, placing the thicker pieces in the center for even cooking.

5

Add herb (hierbena or cilantro) to the pot and cover for 20 minutes.

6

After 20 minutes, add 4 cups of water to the pot and cover for an additional 10 minutes.

7

In a separate cup, mix 1 can of crushed tomatoes with 1 teaspoon of achiote and 1 tablespoon of chicken bouillon powder.

8

Once the 10 minutes have passed, uncover the pot and add the potatoes and carrot, along with the tomato mixture. Stir to combine.

9

Reduce heat and simmer for 15 to 20 minutes until the potatoes are tender.

10

Add more herb (hierbena) for extra flavor, if desired.

11

Once the potatoes and carrots are soft, add 1/2 box of spaghetti to the pot and cook in the chicken broth until tender, about 12 minutes.
