Dice the onion finely using a chef's knife.

Chop the washed and air-dried spinach into bite-sized pieces.

Saute the diced onion in a hot pan with a little bit of pepper until browned, covering with a lid to speed up cooking.

Once the onions are browned, turn off the heat and let it cool.

Dice the ripe tomatoes, removing the tops first.

Combine the spinach and onion mixture with the diced tomatoes.

Add about three cloves of roasted garlic and the diced jalapenos to the mixture and mix well.

Add one to two tablespoons of olive oil to the mixture for moisture.

Cut the ripe avocados in half and scoop out the flesh.

Stuff the avocado halves with the spinach, onion, tomato, garlic, and jalapeno mixture.

Serve the stuffed avocados with tortilla chips, sour cream, and a touch of smoked paprika.
