2 slices whole grain bread
1/2 avocado, sliced
1/2 cup cucumber, thinly sliced
1/2 cup tomato, sliced
1/4 cup red onion, thinly sliced
1/2 cup spinach leaves
2 tbsp hummus
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper

Toast the whole grain bread slices until golden brown.

Spread 1 tablespoon of hummus on each slice of toasted bread.
