Peel and cut the onions into thin slices.
Heat a large knob of butter and some olive oil in a 23 centimeter non-stick cake pan over medium heat.
Cook the onions for about 15 minutes, stirring occasionally, until they are soft.
Add freshly chopped rosemary or thyme to the onions.
Place the goat's cheese on top of the onions, using three thick slices from two cheeses.
Add a few turns of black pepper over the cheese.
Tuck the puff pastry around the onions, ensuring it is larger than the pan.
Prick the pastry to allow steam to escape.
Bake in the oven for the same amount of time as the individual tartlets.
Toast some walnuts in a pan while the tart is baking.
Once baked, place a serving plate larger than the pan over the top and carefully turn the tart upside down onto the plate.
Serve with a side salad of lamb's lettuce drizzled with walnut oil or olive oil and white balsamic vinegar, topped with toasted walnuts.
