Preheat oven to 375°F (190°C).
Chop 1/2 loaf of stale French bread into bite-sized cubes, ensuring they are roughly the same size for even cooking.
Place the chopped bread into a mixing bowl.
Drizzle olive oil over the bread cubes and use your hands to coat them, ensuring there are no dry pieces.
Sprinkle salt over the bread cubes, distributing it evenly.
Add thyme, parsley, onion powder, and garlic powder to the bowl, mixing well to combine all ingredients.
Transfer the coated croutons onto a baking sheet lined with foil (or parchment paper) in a single layer.
Optionally, sprinkle pecorino cheese over the croutons for added flavor.
Bake in the preheated oven for 13 to 15 minutes, checking after 10 minutes to prevent burning.
Remove from oven when golden brown and crispy, allowing to cool before transferring to a storage container.
