Pour 2 cups of water into a bowl and dissolve 1 heaping teaspoon of salt in it.
Add 2 cups of arepa flour to the salted water and mix until combined.
Knead the dough until it reaches a play-dough-like consistency without any dry bits.
Add a little olive oil to the dough to help bind it and create a smooth texture.
Form the dough into balls about 2.5 inches in diameter.
Flatten the balls into discs about 4 inches in diameter, ensuring there are no cracks on the edges.
Heat a skillet over medium heat and add olive oil.
Cook the arepas in the skillet until crispy, then transfer them to a preheated oven at 425°F to finish cooking.
Meanwhile, chop the mushrooms, onion, and garlic for the filling.
Lightly oil a sheet pan for the mushrooms and prepare to roast them in the oven.
Season the chopped mushrooms with cumin, black pepper, and salt before roasting.
Once the mushrooms are cooked, stir in chopped cilantro and lime juice.
Slice the cooked arepas open and fill them with the mushroom mixture.
