Today, they are celebrated across Colombia and have gained popularity in various Latin American communities, often customized with different fillings and toppings.

Introduce 1 cup of harina de maíz precocida into a mixing bowl.
Add 1 cup of water and a pinch of salt to the bowl.
Mix well until the dough is smooth and let it rest for 10-15 minutes to hydrate.
Chop 1 red onion and place it in a bowl with 200 g of ground beef.
Season the beef with a pinch of salt, a touch of cúrcuma, and freshly ground black pepper, then mix well and let it rest for 20 minutes.
Heat a skillet over high heat and add a bit of manteca de cerdo.
Once the fat is hot, add the chopped onion with a pinch of salt and sauté for a couple of minutes.
Add the seasoned ground beef to the skillet and 1 teaspoon of garlic powder, cooking until the beef is well browned.
Reserve the cooked beef mixture.
Divide the rested dough into two equal balls and flatten them into thin discs.
Crack 1 egg into a small saucepan to cook it, or use a ring made from a bell pepper to contain the egg while cooking.
Place a layer of the cooked beef mixture on one dough disc, then add the cooked egg on top.
Cover with the second dough disc and seal the edges well, using the plastic bag to help shape it if needed.
Trim the edges of the arepa if necessary to make it smaller.
Heat enough manteca de cerdo in a skillet for frying.
Once the oil is hot, carefully add the arepa to the skillet and fry until golden brown on both sides.
Remove the arepa from the skillet and drain on paper towels.
