Franc-Comtoise French Galette

1/2 cup (125 g) milk
1/2 cup (125 g) water
1/16 tbs (1.13 g) sea salt
1/3 cup (60 g) sugar
4 tbsp (55 g) butter (softened, at room temperature)
2 tbsp (30 g) orange blossom water
1 1/4 cup (155 g) flour
1/4 cup (60 g) sour cream
3 eggs
1 egg yolk (for egg wash)
1 tbsp (15 g) milk (for egg wash)

Preheat oven to 350F/180C.

In a medium saucepan, heat the milk, water, and sugar together until it starts to boil.

Remove from heat and add the softened butter, mixing until melted.

Add the flour and combine with a spatula to form a ball.

Return to heat to remove some humidity, stirring for a maximum of 1 minute.

Add the eggs one at a time, ensuring each is combined before adding the next.

Add the orange blossom water and sour cream last.

Place the Daisy Flexipan Mold on top of a medium perforated baking sheet.

Pour the mixture into the Flexipan®, add 1 or 2 trinkets, and gently flatten the Pâte à Choux.

Design the top of the galette with a fork and brush it with the egg wash.

Bake for 45 minutes at 350F/180C, monitoring from 35 minutes.

After baking, pass it under the grill to achieve a caramel color, watching closely as it heats quickly.

Let the galette cool completely before sliding it onto a serving plate.
