6 servings
Servings4
1 onion
2 cups baby carrots
2 lbs rotisserie chicken meat
1 tbsp oil
2 tbsp unsalted butter
1/2 tsp salt
1/2 tsp pepper
1 tsp Italian seasoning
1/4 cup all-purpose flour
1/4 cup whole milk
2 cups self-rising flour (or 250 g)
1 tsp Italian seasoning
3/4 cup whole milk
4 tbsp unsalted butter
8 cups water
2 tbsp chicken bouillon
1

Dice an onion on a cutting board using a sharp knife.

2

Cut up 2 cups of baby carrots into thirds and set aside.

3

Cut up 2 lbs of rotisserie chicken meat into bite-sized pieces.

4

Gather the rest of your ingredients: 1 tbsp of oil, 2 tbsp of unsalted butter, 1/2 tsp salt, 1/2 tsp pepper, 1 tsp Italian seasoning, 1/4 cup all-purpose flour, and 1/4 cup whole milk.

5

Prepare a homemade chicken broth by adding 8 cups of water to a pot and heating over medium heat.

6

Add in 2 tbsp of chicken bouillon and stir until combined. Let the mixture come to a boil, then remove from heat and set aside.

7

Add 1 tbsp of oil and 2 tbsp of butter to a large Dutch oven pot. Cook over medium heat until the butter has melted.

8

Add in the diced onion and carrots, cooking over medium heat for 5 minutes or until the veggies have softened.

9

Add 1/4 cup of all-purpose flour to the veggies and stir to combine.

10

Pour in the chicken broth and bring to a boil. Cook the broth on medium heat for 8 minutes until it is frothy and slightly thickened.

11

Stir in the diced chicken and add in the seasonings: 1 tsp Italian seasoning, 1/2 tsp salt, and 1/2 tsp pepper.

12

Pour in 1/4 cup of milk and stir to combine. Let the broth simmer on low while preparing the dumplings.

13

Melt 4 tbsp of unsalted butter and add to the flour mixture of 2 cups self-rising flour and 1 tsp Italian seasoning. Pour in 1/2 cup of milk and use a spatula to stir together.

14

When a small amount of flour remains showing, add in the remaining 3/4 cup of milk and stir until just combined, being careful not to overmix.

15

Using a small cookie scoop or two spoons, begin dropping the dumplings into the pot, leaving space in between.

16

Gently press the dumplings down into the broth with a spatula.

17

Cover the pot with the lid and let simmer on low for 15 to 20 minutes.

18

Test for doneness using a toothpick or fork. If it comes out clean or with just a few small crumbs, they are done. If it sticks or seems doughy in the center, gently press the dumplings down into the broth, put the lid back on, and add an additional 5 minutes.

19

Let the chicken and dumplings cool for 10 to 15 minutes before serving.
