Welcome to the hillbilly kitchen; today we're making chicken and dumplings.

Start with 3 boneless chicken breasts, cut them into smaller pieces to avoid long strings.

Cook the chicken in a pot with some onion and seasoning.

Remove 2 chicken breasts for later use in a casserole.

If you don't have time to cook chicken, you can use a deli chicken, which is often cheaper.

Shred the deli chicken and add it to a pot with butter and chopped onion; let it cook for a while.

Add broth to the pot and let it simmer to mesh the flavors.

For broth, you can use canned chicken or boxed broth; you can also use better than bouillon or bouillon cubes.

Brown the onion in butter before adding broth for added flavor.

Once the broth is boiling, prepare the dumplings.

For dumplings, mix 1.5 cups self-rising flour with 0.75 cups milk; stir until combined, do not over mix.
