Preheat the oven to 350°F (175°C).
Grease a muffin tin with cooking spray or butter.
Cut the challah bread into small cubes and set aside.
In a large bowl, whisk together eggs, milk, and heavy cream until well combined.
Stir in cheese, spinach, onion, garlic, salt, black pepper, and nutmeg.
Add the bread cubes to the egg mixture and gently fold to combine, ensuring all bread is soaked.
Let the mixture sit for about 10 minutes to allow the bread to absorb the liquid.
Spoon the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick comes out clean.
Remove from the oven and let cool for a few minutes before removing from the tin.
Serve warm, garnished with fresh herbs if desired.
