  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Cajun seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 bay leaves
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1Soak the dried navy beans in water overnight, then drain.
  2. 2In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
