2 dried shiitake mushrooms
¼ cup water (to hydrate dried shiitake mushrooms)
1 chicken thigh
½ Tbsp sake (for marinating chicken)
1.8 oz gobo (burdock root) (50 g, 1/3 cup sliced gobo)
1.8 oz carrot (50 g, 1/3 cup sliced carrot)
1 piece aburaage (deep fried tofu pouch)
3 mitsuba (Japanese parsley) (or use green onion)
1 ½ cup dashi (360 ml)
1 ½ Tbsp soy sauce (Use gluten-free soy sauce for GF)
1 Tbsp mirin
½ tsp salt (kosher or sea salt)

dashi

🥗Healthier: vegetable broth

💰Cheaper: water + soy sauce

Vegetable broth offers a lighter option while maintaining flavor.

mirin

🥗Healthier: rice vinegar + sugar

💰Cheaper: white wine + sugar

Rice vinegar adds acidity without the sweetness of mirin.

chicken

🥗Healthier: tofu

💰Cheaper: canned mushrooms

Tofu provides protein while being more affordable.

soy sauce

🥗Healthier: low-sodium soy sauce

💰Cheaper: tamari

Low-sodium soy sauce reduces salt intake.
