Preheat the oven to 350°F (175°C).
Make the glaze sauce by combining olive oil and a stick of butter in a bowl.
Mix brown sugar with regular sugar and add honey to the glaze.
Squeeze a little lemon juice into the glaze mixture.
Add kosher salt, black pepper, and garlic powder to the glaze.
Chop fresh garlic and add it to the glaze mixture.
Add a little water (about ½ cup) to the glaze mixture.
Rinse and cut the ends off the organic carrots, then place them on a tray.
Pour the glaze mixture over the carrots to keep them moist.
Sprinkle locatelli romano cheese on top of the carrots.
Add fresh thyme and cut fresh parsley for garnish.
Place the tray in the oven and roast for 15 to 20 minutes, checking for tenderness.
Remove from the oven and serve as a side dish.
