Peel the apples using a potato peeler.
Cut the apples into quarters and then slice them about a quarter inch thick.
Place the sliced apples into a Dutch oven.
Add 1/2 cup white sugar, 1/4 cup brown sugar, 1 teaspoon cinnamon, a pinch of salt, and lemon zest to the apples; mix well.
Cover and cook on medium heat for 10-15 minutes, stirring occasionally until apples are soft.
Transfer the cooked apples to a baking sheet to cool.
In a large glass bowl, combine 3 cups flour and 1.5 tablespoons sugar; mix.
Add 2 sticks of cubed salted butter to the flour and mix until it resembles wet sand.
Pour in 1 can of media crema and mix until a dough forms; knead for 3 minutes.
Wrap the dough in plastic wrap and refrigerate while the apples cool for 30 minutes.
After cooling, squeeze out 1 teaspoon of lemon juice into the apples and strain the apple juice.
Preheat the oven to 400°F.
Dust the countertop with flour and roll out the dough to a desired thickness.
Cut out circles using a large cookie cutter.
Place apple filling on one half of each dough circle, fold over, and seal the edges by pressing down.
Make three slits on each empanada and glaze with the reserved apple juice; sprinkle with sugar.
Bake the empanadas for 20 minutes at 400°F.
Allow to cool slightly before serving.
