Start by cooking rice in a rice cooker.
Sprinkle cauliflower with magic seasoning salt.
Place cauliflower in a 375°F oven for 20-25 minutes.
Add diced onion to a 6-quart Instant Pot.
Add tricolor carrots to the Instant Pot without peeling them.
Peel and cube two medium sweet potatoes and add them to the Instant Pot.
Add about 3 cups of red lentils to the Instant Pot.
Mix in mustard powder, granulated garlic, curry powder, and paprika into the Instant Pot.
Pour in one can of full fat coconut milk into the Instant Pot.
Add enough water to cover all ingredients in the Instant Pot.
Stir the mixture in the Instant Pot.
Close the valve on the Instant Pot and cook under high pressure for 15 minutes.
Perform a quick release on the pressure after 15 minutes.
Remove cauliflower from the oven and add it to the Instant Pot.
Mix the cauliflower into the dal until well coated.
Prepare a bowl with steamed white rice on one side and greens on the other.
Spoon the cauliflower dal into the bowl.
Top with scallions and a squeeze of lemon juice.
