Prepare the pastry dough and refrigerate for 30 minutes.
In a skillet, heat 2 tablespoons olive oil over medium heat.
Add chopped onion and garlic, sauté until translucent, about 3-4 minutes.
Stir in ful medames and cook for another 5 minutes, mashing slightly.
Mix in ricotta cheese, chopped parsley, lemon zest, cumin, paprika, salt, and black pepper.
Remove the skillet from heat and let the filling cool slightly.
Preheat the oven to 375°F (190°C).
Roll out the pastry dough on a floured surface.
Cut the dough into circles, about 4-6 inches in diameter.
Place a spoonful of filling in the center of each circle.
Fold the dough over to create a half-moon shape and seal the edges.
Brush the tops with beaten egg for a golden finish.
Place the qassatat on a baking sheet lined with parchment paper.
Bake for 25-30 minutes until golden brown and crispy.
