Cheesy Grits

1 cup grits
4 cups water
1 cup shredded cheddar cheese
1/2 cup milk
1/4 cup butter
1/2 tsp salt
1/4 tsp black pepper

In a medium saucepan, bring 4 cups of water to a boil.

Add 1 cup of grits and 1/2 tsp of salt to the boiling water, stirring constantly.

Reduce heat to low and cover the saucepan. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

Once the grits are cooked, stir in 1/4 cup of butter and 1 cup of shredded cheddar cheese until melted and well combined.

Add 1/2 cup of milk to the mixture and stir until smooth.

Season with 1/4 tsp of black pepper to taste.

Remove from heat and let sit for a few minutes to thicken further.
