Place apples into a crock pot.

Add sugar to the crock pot without measuring.

Sprinkle in ground nutmeg on top of the apples.

Add ground cinnamon to the mixture.

Toss in some Chinese five spice.

Add a little bit of salt to balance the flavors.

Pour in half a cup of water into the crock pot.

Set the crock pot to high and let it cook for about 5 hours or overnight.

After cooking, mash the apples with a potato masher to break them down.

Leave the lid off the crock pot and reduce the heat to low to allow some liquid to evaporate.
