1 tsp oregano
1 clove garlic
1 tsp salt
black pepper
1/3 cup white wine
cos lettuce

2-3 small tomatoes

Strain 2 cups of full fat Greek yogurt over a bowl with a paper towel or cheesecloth for at least 10 hours in the fridge.

Remove the liquid from the yogurt and place it in a bowl.

Peel and grate 1 Lebanese cucumber, then squeeze out excess liquid and add to the yogurt.

Finely microplane 1 clove of garlic into the yogurt mixture.

Add 1 tbsp of lemon juice and 1 tbsp of olive oil to the yogurt mixture.

Optionally add 1 tbsp of dill and mix well.

Chop 1 kilo of pork shoulder into chunks suitable for skewering.

In a bowl, combine 2 tbsp of lemon juice, 3 tbsp of olive oil, 1 tsp of oregano, 1 clove of crushed garlic, 1 tsp of salt, black pepper, and 1/3 cup of white wine to make the marinade.

Marinate the pork in the fridge for at least 24 hours.

Prepare a Greek salad with shredded cos lettuce, sliced green capsicums, chopped tomatoes, kalamata olives, and Greek feta cheese.

Make a dressing with 1 part lemon juice to 3 parts olive oil, a pinch of salt, pepper, and oregano, and drizzle over the salad.

Thread the marinated pork onto skewers.

Pat the skewers dry with paper towel.

Heat oil in a pan and cook the skewers until they lift off easily and have a nice color, basting with the marinade as they cook.
