Instructions

  1. 1Lay out slices of bread on a clean surface.
  2. 2Spread mayonnaise on one slice and mustard on the other.
  3. 3Layer deli meat evenly over the mayonnaise side.
  4. 4Add slices of cheese on top of the deli meat.
  5. 5Place lettuce leaves over the cheese.
  6. 6Add tomato slices and onion rings on top of the lettuce.
  7. 7Sprinkle salt and pepper to taste.
  8. 8Add pickles and avocado slices if desired.
  9. 9Top with cucumber slices for crunch.
  10. 10Close the sandwich with the second slice of bread.
  11. 11Press down gently to compact the sandwich.
  12. 12Cut the sandwich in half diagonally.
  13. 13Serve immediately or wrap in plastic wrap for later.

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 sheets nori (seaweed)
  • 1/2 lb soft-shell crab, fried
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/4 cup spicy mayo
  • 1/4 cup eel sauce
  • sesame seeds for garnish

Instructions

  1. 1Rinse the sushi rice under cold water until the water runs clear.
  2. 2In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions.
  3. 3Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the rice. Let it cool to room temperature.
  4. 4Lay a sheet of nori on a bamboo sushi mat, shiny side down.
  5. 5Wet your hands and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.
  6. 6Place a few pieces of fried soft-shell crab, avocado slices, and cucumber strips in the center of the rice.
  7. 7Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll.
  8. 8Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
  9. 9Drizzle spicy mayo and eel sauce over the top of the roll, and sprinkle with sesame seeds.
  10. 10Serve with soy sauce and pickled ginger on the side.
