Steak Béarnaise

Cultural Context

Steak Béarnaise hails from the Béarn region in southwestern France, where it was first crafted in the 19th century. This dish pairs a perfectly cooked steak with a rich, buttery sauce infused with herbs, showcasing the French culinary tradition of elevating simple ingredients through technique. Today, it's enjoyed in bistros and fine dining restaurants worldwide, with variations that may include different herbs or even the addition of mustard for a tangy twist.

1

Combine marinade ingredients; pour over steak and marinate, refrigerated, overnight.

2

Heat grill.

3

Lightly sprinkle steak with more salt and pepper.

4

Grill steak 4-5 minutes per side, to just under medium-rare.

5

Let rest 10 minutes.

6

To make sauce: Heat shallots, vinegar, tarragon and peppercorns in small skillet over medium; simmer until liquid is nearly evaporated, about 5 minutes.

7

Strain into a stainless-steel mixing bowl and let cool about a minute.

8

Bring a small pot of water to a simmer.

9

Add egg yolks to mixing bowl; beat until frothy.

10

Place bowl over simmering water and whisk 3-4 minutes, until sauce is pale and thick, with all frothiness gone.

11

Remove from heat.

12

Slowly drizzle in clarified butter while whisking (don’t rush this part or your sauce could break, but don’t let sauce get too cool, either).

13

If sauce gets too thick, add a few drops of hot water.

14

Stir in salt, pepper, lemon juice and herbs.

15

Cut steak in half lengthwise, then slice against grain (crosswise).

16

Pour sauce over steak; serve immediately.
