Place the pork between pieces of plastic wrap and pound to an even 1/8- to ¼- inch thickness.

In a shallow bowl, season the flour with the Essence and 1 teaspoon of salt and stir to blend well.

Working in batches and adding more oil as needed, fry the schnitzel, turning as needed for even browning, until the crust is deep golden brown and the pork is just cooked through, 2 to 3 minutes per side depending on thickness.

Drain on paper towels briefly to blot any excess oil, then on wire racks until ready to serve. Repeat with the remaining pork.

Place whole, unpeeled potatoes in a large pot and add water to cover by at least 2 inches; bring to a boil.
