Drain 2 cans of sardines in olive oil into a fine sieve with a bowl underneath.
Transfer the sardines into a large bowl and break them apart using a wooden spoon.
Add 1/2 cup of mayonnaise, 1 tbsp of dijon mustard, 1/3 cup of finely chopped red onion, 1/3 cup of finely chopped celery, 1 clove of grated garlic, 2 tbsp of chopped fresh parsley, and 2 tsp of fresh lemon juice to the sardines.
Grate in some lemon zest, avoiding the white pith, and season with sea salt and black pepper.
Mix everything together until well combined.
Thinly slice 1 large tomato and a couple of slices from an English cucumber, and reserve some shredded iceberg lettuce.
Lightly toast 2 slices of whole wheat sandwich bread.
Assemble the sandwich by adding a generous portion of the sardine salad over one slice of toast, then top with cucumber slices, tomato slices, and shredded iceberg lettuce.
