Puree 2 tomatoes in a blender without adding water and set aside.

Soak 2.5 cups white basmati rice in 3.5 cups water for 15 to 20 minutes.

Select the sauté setting on the Instant Pot and heat the stainless steel pot.

Add 3 tablespoons ghee and sauté the whole spices (5 cardamoms, 3 cloves, 3-inch cinnamon stick, 2 bay leaves, 2 dry lemons) for a couple of minutes.

Add 2 chopped yellow onions and 1 tablespoon ginger garlic paste, sauté for 3 minutes until golden.

Add 1 cup chopped green pepper and cook for a couple more minutes.

Add 1 cup fresh tomato puree and 3 tablespoons tomato paste, cook for a couple more minutes until thickened.

Add 8 chicken drumsticks and combine with the gravy.

Add spices: 1 tablespoon coriander powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 0.5 teaspoon cardamom powder, 0.25 teaspoon cinnamon powder, and 1 teaspoon black pepper, mix well.

Add 1 cup hot water and combine, then close the lid and select the pressure cook setting for 10 minutes on high pressure.

After cooking, let the pressure release naturally for 5 minutes, then do a quick release.

Remove the chicken from the pot and set aside.

Prepare a paste with 2 teaspoons paprika, 0.5 teaspoon black pepper, and 1.5 tablespoons olive oil, and spread over the chicken.

Air fry the chicken in the Instant Pot Duo Crisp for 10 minutes at 400°F.

Measure the remaining gravy, which should be about 2.5 cups, and use it to cook the soaked basmati rice.
