2 onions, sliced
2 cubes ginger and garlic paste
6 chicken legs + 6 thighs
2 cups basmati rice, rinsed and soaked
1 large dried bay leaf
6 cloves
1 black cardamom
2 cinnamon sticks
½ teaspoon black pepper corns
1 teaspoon ground black pepper
1 teaspoon ground cumin powder
1 teaspoon ground coriander powder
1 tablespoon crushed chilli flakes
200 g canned chopped tomatoes
3 cups water
2 teaspoons salt
Raisins, almonds and cashews to garnish (optional)

Heat oil and butter in a large heavy bottomed pan over medium-high heat. Add onions and ginger, garlic paste. Sauté for 2-3 minutes or until the onions turn golden brown.

Add chicken and sauté with onions until golden brown.

After that, add all the spices and chopped tomatoes. Cook chicken, turning occasionally, for about 15 minutes, take them out of the pan, and set aside.

Pour in water, add rice, bring it to boil. Reduce the heat, cover with lid, and simmer for 10-15 minutes.

In a pan roast some nuts in little oil, set aside.

Grill chicken for 10-15 minutes or until cooked through and golden. This will give the chicken pieces a nice crispy outer layer.

Serve rice with grilled chicken and roasted nuts and raisins.
