Drop cauliflower into a pot with about half an inch of simmering water and a little bit of salt.

Cover the pot with a lid and steam the cauliflower for about 15 minutes until fork tender.

Boil salted water for the pasta.

Add 2 small handfuls of spinach and 1 small handful of arugula to a small food processor.

Add a little bit of salt and white pepper to the greens in the food processor.

Run the food processor for a few seconds to chop the greens.

Add more spinach and arugula to the food processor and chop again.

Slowly drizzle in a couple of tablespoons of olive oil while running the food processor until the mixture reaches the desired consistency.

Add cayenne pepper to taste, along with more olive oil, and blend again.

Add 1/4 cup of parmesan cheese to the mixture and run the food processor one last time until smooth.

Drain the pasta when it's ready, but do not rinse it.

Toss the pesto with the drained pasta or with the steamed cauliflower for the keto version.
