4 tbsp Korean chili paste
2 tbsp sugar
1 tbsp vinegar
1 tbsp lemon juice
1 tbsp minced garlic
0.5 tbsp toasted sesame seeds
2 tbsp Sprite
4 tbsp soy sauce
0.5 tbsp sugar
1 tbsp mirin (optional)
1 tbsp thinly sliced green onion
1 tsp minced chili

Prepare the sauces first. In a small bowl, mix 4 tbsp of Korean chili paste, 2 tbsp of sugar, 1 tbsp of vinegar, 1 tbsp of lemon juice, 1 tsp of minced garlic, 0.5 tbsp of toasted sesame seeds, and 2 tbsp of Sprite.

In another bowl, combine 4 tbsp of soy sauce, 0.5 tbsp of sugar, 1 tbsp of mirin (optional), 1 tbsp of thinly sliced green onion, 1 tsp of minced chili, 1 tsp of minced garlic, and 0.5 tbsp of toasted sesame seeds. Crush the sesame seeds slightly before mixing.

Cut 300 g of boneless skin on chicken thighs into bite-sized pieces. Alternatively, chicken breast can be used for a lighter option.

In a small container, mix 1 tbsp of soy sauce, 1 tbsp of mirin, 1 tbsp of sugar, 1 tbsp of minced garlic, 0.5 tbsp of toasted sesame oil, and a few shakes of black pepper for the chicken marinade.

Marinate the chicken pieces in the sauce for a while.

Prep the vegetables: Slice a quarter of an onion thinly and soak it in cold water for about 5 minutes to reduce its strong flavor.

Slice 2 lettuce leaves and 2 cabbage leaves into thin strips. Cut 4 perilla leaves into thin strips as well.

Julienne the carrot and cut half a cucumber into thin matchsticks.

Heat a pan over medium-high heat and add 0.5 tbsp of oil. Once hot, add the marinated chicken in a single layer and cook for 2-3 minutes until browned on one side.

Flip the chicken and cook for another 2 minutes or until fully cooked. Pour in the marinade and toss the chicken for about a minute until coated.

Remove the chicken from the pan and set aside.

In another pan, cook sunny-side up eggs to your desired doneness.

To assemble, place 1 cup of hot rice in a bowl and drizzle with 1 tbsp of toasted sesame oil.

Top the rice with the prepared onions, lettuce, cabbage, perilla leaves, carrots, cucumbers, and the cooked chicken.

Finish with the fried egg on top and sprinkle with toasted sesame seeds. Serve with your preferred bibimbap sauce.
